The blood sausage, is a stuffed sausage elaborated from rice, pork blood, lard and horcal onion. It is seasoned with spices to get its characteristic flavor mainly pepper and paprika. Once all the ingredients are kneaded, they are stuffed in natural casings of beef for cooking.
The blood sausage is delicious if we eat it hot, freshly cooked, and, the cooking stock, called mondongo stock, is used to cook soups.
It has a mild palate and is slightly spicy, and is made every day.
Ingredients: rice, blood, onion, lard, pepper and pepper.
No gluten or lactose.
